Figs from South Africa

Fresh figs are soft, sweet fruit with a honeyed flavour and a tender skin, served fresh, with cheese, in salads or in baking. South African figs for export are grown in the Western Cape, where the Mediterranean climate suits the trees.
They are available from December to May, which lets buyers offer fresh figs outside the northern hemisphere season. Figs are fragile and are picked by hand at the right ripeness, laid in single layers in trays or punnets, and packed in cartons. They are pre-cooled promptly and shipped under a close cold chain, often by air, to keep them in good condition.
